An apple pie which doesn’t look like an apple pie! These mini domes are adorable and perfect for a high tea or with coffee. You can also make these as larger sizes, in pastry cases for instance.
Ingredients:
For the Cookie Base:
- 200gr vegan butter, soft
- 160gr muscovado sugar
- 200gr flour
- 1 tsp baking powder
- pinch of salt
For the Apple Domes:
- 2 Elstar apples
- 2 tsp sugar
- 1 tsp cinnamon
- 1 tsp agar agar
Makes about 25 mini domes

Make the cookie base:
Beat together the butter and sugar.
Combine the flour, baking powder and salt. Beat the flour into the butter mixture, combining well but limiting the time to do so.
Spread the mixture out in a baking pan. It will spread on a cookie sheet so don’t use those.
Bake for 18min on 190°C. Cut the cookies directly from the oven to a slightly bigger size than the dome size you’re using.
Make the apple domes:
Peel and core the apples. Cut them finely.
Heat the appes with the sugar, cinnamon and agar agar until boiling. Cook until the apples have softened somewhat, you want some crunchier pieces and some which are close to dissolving (for this reason I tend to use multiple types of apples in my apple pies). Take out 3 tablespoons of the apples, puree this. Spoon the rest in small silicone domes and leave to set.
Assembly:
Unmould the silicone domes.
Place a tiny bit of apple sauce on a cookie and push a dome on top.
