Apple Cinnamon Crumble Muffins

Anything with apple and cinnamon is always a hit. But these muffins take far less time than a pie does.


  • 150ml/gr milk
  • 50gr Greek yogurt
  • 75gr melted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 200gr flour
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 75gr sugar
  • 1 tbs cinnamon
  • 2 apples

For the crumble topping:

  • 75gr cold butter
  • 60gr flour
  • 30gr rolled oats
  • 50gr sugar

Makes 12


Combine the wet ingredients: milk, yogurt, melted butter, egg and vanilla.
Combine the dry ingredients: flour, baking soda, baking powder, sugar and cinnamon.
Peel the apples and cut them in 1cm cubes. Toss them with the flour mixture.

Make the crumble: pulse all ingredients in a kitchen machine until holding together somewhat.

Stir the wet ingredients into the dry ingredients and stir until just combined. Lumpy is fine, as long as there is no dry flour left.
Scoop the batter into paper cups. I use sturdy cups but you can use the standard muffin liners as well.
Divide the crumble on top.

Bake for 20min on 200°C.
Best served warm but also great at room temperature – but use the excuse to eat one still warm before showing anybody what you made.
