It’s a shame I don’t have a picture, but it was gone so fast I didn’t really get a good opportunity. It has hints of caramel due to te sugar used, and the finely chopped nuts add an earthy element.
- 150gr soft butter
- 80gr moist brown sugar
- 3 eggs
- 1 tsp baking powder
- 150gr flour
- 40gr Greek yogurt
- 1 tsp vanilla extract
- 2 tbs honey
- 50gr hazelnuts, finely chopped
- 50gr walnuts, finely chopped
- 50gr pecans, finely chopped
- 2 Elstar apples
Makes 1 cake
Cream together the butter and sugar until soft and light.
Add the eggs one by one and beat until combined.
Then beat in the yogurt, vanilla and honey.
Combine the flour and baking powder. Beat this into the creamed butter until just combined.
Finally, briefly beat in the nuts.
Spread the batter over a cake tin.
Peel and core the apples. Cut each into 16 wedges. Push the wedges upright into the batter.
Bake for 60 minutes on 170°C.
