A great way to serve this crisp baked, well flavoured beef is in lettuce cups. You can serve it as a main, but also as starters to an Asian inspired meal. Don’t worry about the long list of ingredients, most are pantry items.
Ingredients:
- 175gr minced beef (or beef/pork mixture)
- 1/2 chili pepper, rings
- 1 garlic clove, chopped finely
- 1/2 tsp moist brown sugar
- 1/8 tsp powdered ginger
- 1 tsp fish sauce
- 1/2 small onion
- 1 tbs sunflower oil
- 1 tsp soy sauce
- 1 tbs chopped coriander leaf
- 1 little gem lettuce
Serves 1 as part of the Budget Challenge
Recipe:
Combine the minced beef, chili pepper, garlic, sugar, powdered ginger and fish sauce. Stir to combine.
Chop the onion finely. Heat the oil in a frying pan, add the onions and sweat until soft.
Add the beef, then bake on a high flame until brown. Stir often to avoid the beef sticking.
Meanwhile, cut the base off the lettuce. Take the leaves apart and lay them on a plate.
When the meat is brown, stir in the soy sauce. Turn off the heat.
Stir the coriander leaf into the beef. Divide it over the lettuce cups.
