I really dislike bananas but banana cake is a whole another story! I refuse calling banana cake a banana bread though.
- 50gr shredded coconut
- 100gr yellow raisins
- 150ml Safari liqueur (or rum if you don’t have Safari)
- 200gr flour
- 1 tbs baking powder
- 1/2 tsp baking soda
- 130gr butter
- 150gr sugar
- 3 large eggs
- 100ml milk
- 1 tbs lemon juice
- 3 large bananas or 4 small ones
Combine the coconut, raisins and Safari in a bowl and leave to soak.
Butter and flour a large cake tin.
Combine the flour, baking powder and baking soda and set aside.
Mash the bananas in a bowl or deep plate and set aside.
Cream together the butter and sugar, then add the eggs one by one until combined well. Add the milk and lemon juice, mix well and then add the flour mixture to the batter. When the batter is smooth, mix in the mashed bananas and finally the coconut and raisins, including any leftover Safari.
Scoop the batter into the cake tin.
Bake for an hour and 15 minutes on 170°C, or until a skewer comes out clean
