Banana Coconut Pancakes (BC)

These pancakes are a bit different, but in a good way! They are also lactose free.

Ingredients:

  • 50gr flour
  • 2 tsp sugar
  • 2 tsp baking powder
  • 1/4th tsp cinnamon
  • pinch of salt
  • 1 egg
  • 100gr coconut milk
  • 1 tsp sunflower oil
  • 1 banana, mashed

Makes 8 small pancakes, part of the Budget Challenge

Recipe:

Combine all the dry ingredients. Add the egg and coconut milk, stir well to get any lumps out, then stir in the oil and the banana. Leave to stand for 20-30 minutes so the baking powder can activate and make the batter lighter.

Heat a frying pan or unribbed grill plate. Do not add oil, it’s not needed.
Pour a sauce ladle of batter onto the pan. Get as many in the pan to have them not touch eachother.
Bake on a medium flame until the top shows bubbles and is starting to almost set. Flip the pancakes over. Turn the heat up and bake briefly until brown.
I get 4 pancakes together on my grill plate at once and 8 pancakes out of the batter.

If desired, serve with syrup or powdered sugar.
