A serious noodle soup. Very delicious too.
- 1 tsp sunflower oil
- 170gr beef steak
- 400ml water
- 1/2 stock cube
- 1 tsp soy sauce
- 35gr noodles
- 1/2 cucumber
- 100gr Swiss Brown mushrooms
- 2 spring onions
Serves 1 as part of the Budget Challenge
Heat the oil in a small frying pan. Add the beef and bake brown on both sides. Keep it medium in the middle though. Place the beef on a cutting board and cover loosely with aluminium foil.
Meanwhile, heat the water, stock cube and soy sauce to a rolling boil. Add the noodles and cucumber (cut into pieces) and cook according to packet instructions.
Halve the mushrooms and add them to the pot for the last 3 minutes of the cooking time (so check the time the noodles need).
Slice the spring onions into 3cm pieces and add them for the last minute of boiling time.
Cut the beef across the grain into thin slices.
Pour the soup into a deep plate or bowl. Top with the beef and sprinkle with some black pepper.
