Blueberry Pancakes

The ultimate summer breakfast treat (and perfect for lunch and dinner too, let’s face it, anytime works for these). If you do not have wholemeal flour, you can use only all-purpose, but you will lose an excuse to think this is healthy.

Ingredients:

  • 200gr flour
  • 50gr wholemeal flour
  • 1/2 tsp baking powder
  • pinch of salt
  • 25gr sugar
  • 2 eggs
  • 275ml milk
  • 50gr melted butter
  • 125gr blueberries

Recipe:

Combine the dry ingredients – flours, baking powder, salt, sugar. Add the eggs and half of the milk and whisk to combine. Add the remaining milk and the butter and whisk to combine well. Add more milk if the batter is too thick.

Heat a baking plate or frying pan on the stove. Scoop a sauce spoon of the batter on the plate and top the batter with some blueberries while the batter is still liquid. Bake until the batter is starting to bubble and dry a bit (you want them a bit liquid on top though), then flip them over and bake for half a minute on a high flame, or until the bottom has browned nicely.

Serve warm, with powdered sugar, syrup, fresh fruit or whipped cream.
