Paninis are great, they are easy yet delicious, and allow for a bit more luxury at lunch without going overboard. If you don’t have a panini press, you can use a horizontal toaster, or you can go for the student version and use an iron (yes, the thing you iron clothes with… it really does double as a toaster)
- 75gr spinach
- 2 tbs cream cheese
- pinch of nutmeg
- hard boiled egg
- mini ciabatta roll
Serves 1 as part of the Budget Challenge
Heat the spinach and cream cheese in a sauce pan. Let the spinach sweat and shrink, then add the nutmeg and salt and pepper to taste.
Cut the ciabatta in half horizontally.
Slice the egg. Divide the slices over the bottom half of the bread. Top with the creamy spinach and then with the top half of the ciabatta.
Bake for 3 minutes in a panini press, or until the bread has grill-marks and has become extra crunchy.
