- 1 medium potato, floury, approx 175 gr peeled weight
- 250 gr broccoli
- 2 tbs milk
- pinch of nutmeg
- 10 gr butter
- salt / pepper
Serves 1 as part of the Budget Challenge
Peel the potato and cut it into 1×1 cm cubes.
Peel the stalk of the broccoli and cut off the end. Cut the entire thing, stalk and all, into cubes of 1×1 cm. Boil potato and broccoli for 10 minutes or until cooked.
Drain the potato and broccoli. Return them to the warm pan and add the milk, nutmeg, butter, salt and pepper. Mash. Use a fork if you don’t have a masher.
Serve with the baked portobellos. Add a little cube of butter to the middle of the mash if you want, a simple but delicious alternative to gravy.
