Broccoli Mash (BC)

In The Netherlands one of the most famoush dishes is called “stamppot”, which is a combination of potatoes and vegetables, mashed together. The most popular is with kale, but this variation uses broccoli instead.

Ingredients:

  • 350gr peeled floury potato
  • 250gr broccoli
  • 1 tbs milk
  • 1/8th tsp nutmeg
  • 20gr butter
  • salt/pepper

Serves 1 as part of the Budget Challenge

Recipe:

Cut the peeled potato into small chunks. Cut the broccoli in florets.
Cook the potato and broccoli for 8-10 minutes or until cooked.

Add the milk, nutmeg and butter. Season to taste with salt and pepper. Mash.
Serve with meat and gravy or baked mushrooms.
