Chai is a very fragrant spice blend, which lends itself well to drinks but also to cakes, like in this dairy free, vegan chai cake. You can find my recipe for a chai spice blend here. And the chia egg replacement can be found here
- 110gr vegan butter, soft
- 100gr sugar
- 140gr unsweetened apple sauce
- 100gr soy milk
- 1 tbs chia egg replacement
- 200gr flour
- 2.5 tsp baking powder
- 1.5 tbs chai spice mix
Makes a shallow baked 20cm square cake, or a deeper 20cm round cake
Cream together the vegan butter and sugar until creamy. Beat in the apple sauce, soy milk and chia egg replacement.
Combine the flour, baking powder and chai mix. Stir this into the batter.
Spread out over a 20cm square tin (or a 20cm round tin, add 10min to the baking time)
Bake for 25min on 190°C.
