Cheesy Potato (BC)

Potato and cheese, what more do you want? This is great with a bowl of onion soup. If you don’t like Gorgonzola, leave it out. You can also use brie for this.

Ingredients:

  • 1 large floury potato
  • 1 tbs Gorgonzola cheese
  • 1.5 tbs grated cheese

Serves 1 as part of the Budget Challenge

Recipe:

Steam or cook the potato until done. I steam mine in a steaming container for 4-5 minutes.
Place the potato in an ovenproof dish and cut the top open in a cross. Fold the tops open. Use a fork to crumble the insides a bit, which will allow for a nicer finish as the cheese has a larger surface to stick to.
Spread the cheeses out over the top.
Place the potato under the grill until the cheese has browned well.
