I love adding oyster sauce to chicken stir-fries, it somehow transforms the entire dish from fresh and vibrant to deep and rich, which is what I just crave certain days. You need two chicken thighs for this dish, but only the meat. If you have chicken with bones, simply cut the meat from the bone with a small knife.
- 2 chicken thighs, meat only
- 1 tbs butter
- 1 onion
- 50gr cashew nuts
- 2 cloves of garlic
- 1/2 red bell pepper
- 1 tbs oyster sauce
Serves 1 as part of the Budget Challenge
Cut the chicken thigh into 3cm cubes.
Heat the butter in a frying pan. Place the chicken skin down in the pan and bake until the skin has become very crisp.
Cut the onion into rough chunks. Add the onion and the cashew nuts to the chicken. Toss for 3 minutes.
Chop the garlic finely. Cut the bell pepper into cubes.
Add the garlic and bell pepper to the chicken. Bake for 1 minute, then add the oyster sauce and back for another minute while stirring often.
Serve with pasta.
