Chicken Drumstick with Honey Chicory (BC)

Chicory is a bitter vegetable, which becomes sweeter when being cooked. To finish, adding honey balances the chicory out perfectly.

Ingredients:

  • 2 drumsticks
  • 1 tsp sunflower oil
  • salt/pepper
  • 1 chicory (200gr)
  • 1 tsp butter
  • 1 tsp honey
  • salt/pepper

Serves 1 as part of the Budget Challenge

Recipe:

Heat the sunflower oil in a small frying pan. Bake the drumsticks brown in around 10 minutes, then cover with a lid and bake for 5-10 minutes or until cooked through. You can check if chicken is cooked by poking it with a knife, grazing the side of the bone. If the liquid that comes out is clear, the chicken is cooked.
Season to taste with salt and pepper.

Meanwhile, cut the chicory into rectangles.
Heat the butter in a small frying pan and add the chicory. Simmer for 5 minutes or until the chicory has wilted and is cooked through.
Add the honey and season to taste with salt and pepper.

Goes great with all kinds of starches.
