Stroganoff is a simple dish, yet incredibly delicious.
- 1 tbs butter
- 1 small onion
- 150gr chicken breast
- 250gr Swiss Brown mushrooms
- 125ml cooking cream (15% fat)
- pinch of nutmeg
- 1/4th tsp paprika powder
- 1/8th tsp Dijon mustard
- 100gr rice
Serves 1 as part of the Budget Challenge
Weigh the rice in a measuring cup and read off how much ml it is. Add the rice plus water; 1.5x the amount of rice in ml. Cook without a lid until there are tunnels of steam in the rice (don’t stir). Cover with a lid, turn off the heat and leave for 5-10 minutes. The rice will remain hot for longer.
Chop the onions finely. Melt the butter and sweat the onions for a minute.
Cut thechicken into 1.5cm pieces, add them to the onions. Bake on a high flame for 2 minutes or until somewhat browned. They don’t have to be cooked through.
Add the quartered mushrooms and bake for 3 more minutes.
Add the cream, paprika, nutmeg and mustard. Stir well and cook to reduceon a high flame. Season to taste with salt and pepper.
Fluff the rice with a fork to loosen the kernels and serve with the stroganoff.
