Cinnamon Banana Bread with Sticky Top

A cake that is baked with a sticky layer in the bottom. After flipping, this makes the top. Make sure the tin is lined with baking paper or the sticky layer will stick to the tin.

Ingredients:

  • 2 large eggs
  • 2 very ripe bananas, mashed
  • 75gr sugar
  • 100gr soft butter
  • 100gr Greek yogurt
  • 175gr flour
  • 1.5 tsp baking powder
  • pinch of salt
  • 2 tsp cinnamon

For the sticky topping:

  • 40gr moist brown sugar
  • 2 tbs honey
  • 2 tbs flour
  • 2 tbs soft butter
  • 1 tsp cinnamon

Makes 1 cake, serves 12

Recipe:

Combine the eggs, mashed bananas, sugar, butter and yogurt.
Combine the flour, baking powder, salt and cinnamon.
Fold the dry ingredients in the wet ingredients.

Place a circle of baking paper in a 20cm round cake tin.
Combine the ingredients for the sticky topping and spread this over the base of the cake tin.
Pour the batter on top.

Bake for 60 minutes on 170°C.
Leave to cool for 10 minutes, then flip and peel off the baking paper. Leave to cool.
