Club Sandwich (BC)

The simplest version of a club sandwich is just bacon, chicken, lettuce and mayo. Get creative with egg, tomato and avocado if you must, but it is great without as well.

Ingredients:

  • 3 slices of bacon
  • 100gr chicken
  • 4 slices of bread
  • 1 tbs mayonnaise
  • lettuce

Makes 2 sandwiches (Serves 1 hungry person as part of the Budget Challenge)

Recipe:

Halve the slices of bacon. Bake them in a dry, hot frying pan until starting to brown and crisp up. Take them from the pan, shaking off any excess fat into the pan.

Slice the chicken horizontally, quite thinly, around 5mm thick. Bake for a minute on each side or until brown and cooked through.

Spread 2 slices of bread with some mayonnaise. Place lettuce on top, then half the chicken on each. Finish with the bacon and the remaining bread. Enjoy!
