A different way to make fried rice, incorporating different and a larger quantity of vegetables.
- 1 tbs sunflower oil
- 1/2 aubergine (eggplant)
- 1/2 courgette (squash)
- 120gr cooked rice
- 2 medium sized eggs
Serves 1 as part of the Budget Challenge
Cut the aubergine and courgette into small cubes.
Heat the oil in a frying pan. Bake the vegetables for 5-7 minutes on a low flame or until soft. Turn up the heat until they start to brown a little. Add the rice and some salt and pepper to taste.
Stir everything together well and make sure the rice is nice and hot.
Crack the eggs on top of the rice. Leave them for 30 seconds before stirring briefly. You want some pieces of egg in your fried rice. Wait for another 30 second and flip again. Do this once more if required. Serve hot.
