A very simple bulgur salad, which is very filling. You can serve it as a side at barbecues, but it also makes a great lunch salad on its own. Bulgur is cracked wheat and can be found in most Turkish and other Middle East or African supermarkets
- 50gr bulgur
- 1/2 lime
- 2 spring onions
- 1/2 courgette
Weigh the bulgur in a measuring cup. Place it in a thick bottomed sauce pan and add 1.5 times the amount in water (hence the measuring cup. Cook it until dry, there will be some small tunnels, then cover with a lid, turn off the flame and leave for 15 minutes. Do not rinse it afterwards as it will make the bulgur watery.
Slice the spring onion in thin rings. Cut the courgette in 0.5cm cubes.
Zest and juice the lime in a bowl. Add the spring onion and courgette and stir well. Add the bulgur, stir to combine and season to taste with some salt and pepper.
