Vegetable fritters are such a great way to serve vegetables in a different way. These contain coriander and are great with the Coriander Ginger Dipping Sauce.
- 1 courgette
- 1 tsp grated ginger
- 1 spring onion
- 4 tsp fresh coriander, chopped
- 1 egg
- 30gr flour
- 1 tbs sunflower oil
Makes 8 – Serves 1 as part of the Budget Challenge
Grate the courgette coarsely. Place it between sheets of kitchen towel, then push the moisture out.
Combine the courgette with all the other ingredients except for the sunflower oil.
Heat the oil in a frying pan. Take scoops of the courgette mixture and make patties in the pan. The batter will not hold together well in the bowl, but once the egg sets they become a bit firmer.
Bake for 2-3 minutes per side.
