Making fish packages is a great way to cook when you have limited time. Wrap a fish together with some veg, herbs and/or citrus slices, toss it in the oven and you have plenty of time for a shower. This fish package contains only three ingredients; one fish, half a bulb of fennel and one orange. I am no fan of fennel, but it goes so perfectly with citrus fruit and fish. If you have the time, making orange parts does pay off, it makes eating a whole lot easier. You can either cut the wedges out between the membranes, or peel the oranges, separate the wedges and simply cut each piece in 2 or 3 pieces for easier eating. If using unwaxed oranges, you can tuck some of the zest in the fish belly.
- 1 medium sized mackarel, cleaned
- 1/2 small fennel
- 1 orange, preferably unwaxed.

Clean the fish belly out. Slice the fennel very thinly and arrange the slices on a large piece of aluminium or thick baking paper. Slice the orange or cut the flesh into parts, and arrange this on top of the fennel. Place the fish on top, then sprinkle of some salt and pepper. Close the package loosely. It should be sealed well on top but you want a bit of room around the fish. Place the package on a baking tray and bake for 25 minutes on 200°C.
