Perfect lunch any day: mushrooms baked with garlic and served with crusty bread, what more could you want?
Ingredients:
- 180gr Swiss brown mushrooms
- 2 tsp butter
- 1 clove of garlic
- salt / pepper
- 1 tsp dried chives
- 1 crusty breadroll
- mayonnaise (optional)
Serves 1 as part of the Budget Challenge
Recipe:
Brush any sand from the mushrooms and cut bad ends off. Don’t wash them, they’ll become soggy.
Melt the butter in a frying pan and bake the mushrooms on a high flame until brown.
Chop or grate the garlic. Add to the mushrooms, then season to taste with salt and pepper.
Bake for a minute of medium low flame.
Stir in the chives and bake 30 seconds more.
Cut the bread in half lengthways. Personally I wouldn’t add the mayonnaise, but feel free to slather some on if you prefer. Divide the mushrooms over both halves and enjoy!
