Green Scrambled Eggs (BC)

Making scrambled eggs au bain marie sounds ridiculous. But it really does make incredibly creamy scrambled eggs.

Ingredients:

  • 2 eggs
  • 1 tsp pesto
  • 1 tbs milk
  • 1 tbs cream
  • salt/pepper
  • 1 tsp butter
  • 2 slices bread, toasted

Serves 1 as part of the Budget Challenge

Recipe:

Heat water in a sauce pan. Place a bowl on top, melt the butter in the bowl, coating the sides as well.
Combine the eggs, pesto, milk and cream in a cup. Season to taste with salt and pepper and stir well with a fork. Pour it into the hot bowl.

With a spatula, fold the sides over every 20 seconds or so. When the eggs start being more solid, fold every 10 seconds. It should take about 4 minutes to scramble the eggs this way. Especially in the beginning it goes slowly. But it is worth it!
Serve on toast.
