Hamburger with Bacon and Egg (BC)

A real proper meal, with lots of protein. The XL burger is topped with bacon, plus a baked egg. Serve with a simple salad (see end of recipe) and some oven fries.

Ingredients:

  • 1 small onion
  • 250gr minced beef
  • 1 clove of garlic, pressed
  • 1/2 tbs milk
  • 1 tbs breadcrumbs
  • 1/4th tsp paprika powder
  • salt/pepper
  • 2 tsp sunflower oil
  • 3 rashers bacon
  • 1 egg

Serves 1 as part of the Budget Challenge

Recipe:

Chop 1/4th of the onion finely. Slice the remainder.
Combine the minced beef, chopped onion, garlic, milk, breadcrumbs, paprika, salt and pepper. Form a patty.

Heat 1 teaspoon of sunflower oil in a small frying pan. Bake the patty for 5-6 minutes per side, or until cooked through.
Meanwhile, bake the bacon until crisp.
Heat the remaining sunflower oil and sweat the onions until soft. Place aside.
Bake the egg in the greasy pan until the white has set but the yellow is still runny.
Briefly re-heat the onions.

Place the burger on a plate (or bun if your mouth can handle even more layers) and top with the egg, bacon and baked onions.

Serve with rustic fries and a salad with pickles and pickled onions. A good dressing for your salad; 1 tsp vinegar, 1 tbs oil, 1/2 tsp Dijon mustard, 1/4 tsp dried dill, salt. Shake in a small jar.
