A spice blend similar to the Jerk spices used often in Jamaican cuisine, this blend is perfect for poultry and fish.
Ingredients:
- 2 tbs salt
- 2 tbs ground black pepper
- 2 tbs sweet paprika powder
- 2 tbs dark muscovado sugar
- 1/2th tsp chili powder
- 1 tbs garlic powder
- 1 tsp allspice powder
- 1/2 tsp cinnamon powder
- 1/2 tsp nutmeg
Recipe:
Combine all the ingredients. Store in a dry place.
You can use this rub for poultry and fish. Rub the item well, leave to infuse for 30 minutes prior to preparation of the item.
