Lemon Blueberry Muffins

Not too sweet, not too tart, these are perfect any time of the day.


  • 170ml/gr milk
  • 60ml/gr lemon juice
  • zest of 1 lemon
  • 75gr melted butter
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 200gr flour
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 90gr sugar
  • blueberries

Makes 12


Combine the wet ingredients: milk, lemon juice and zest, melted butter, egg and vanilla.
Combine the dry ingredients: flour, baking soda, baking powder, sugar.
Stir the wet ingredients into the dry ingredients and stir until just combined. Lumpy is fine, as long as there is no dry flour left.
Scoop the batter into paper cups. I use sturdy cups but you can use the standard muffin liners as well.
Toss some blueberries on top.

Bake for 25min on 200°C. Eat at least one warm.
