This is a very easy soup, made of two sweet vegetables which pair very well together. It is a filling soup and can definitely be served as a meal. Leave out the macaroni if you want to serve it as a starter, and make portions smaller.
- 1/2 leek
- 250ml water
- 1/2 stock cube
- 1 tbs tomato paste
- 25gr macaroni
- 1 small little gem lettuce, sliced into strips
- 50gr frozen peas
Serves 1 as part of the Budget Challenge
Slice the leek. Add it to a pot with the water, stock cube and tomato paste. Bring to a rolling boil.
Add the macaroni, lettuce and frozen peas. Leave to simmer for 6 minutes or until the macaroni is cooked.
