Meatballs baked in the oven, served with a tomato sauce, fresh tomatoes and spaghetti. Meatball spaghetti with a twist. Use 8 of the meatballs as per the Oven Baked Meatball recipe.
- 1/2 can tomatoes (200gr)
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 150gr Swiss brown mushrooms, quartered
- 75gr spaghetti
- 80gr fresh cherry tomatoes
- 8 meatballs (1/3rd of the Oven Baked Meatballs recipe)
Serves 1 as part of the Budget Challenge
Cook the spaghetti.
Combine the canned tomatoes, basil, oregano, salt, pepper and mushrooms in a thick based saucepan. Leave to simmer for 5 minutes to allow the flavours to combine and the sauce to cook through.
Heat the meatballs. Halve the cherry tomatoes.
Place the spaghetti in a deep plate. Top with the tomato sauce, meatballs and cherry tomatoes.
