Niçoise(ish) Salad (BC)

This Niçoise style salad is perfect for sunny lunches or simple dinners.

Ingredients:

  • 120gr potatoes
  • 1 hardboiled egg, quartered
  • 100gr canned corn, drained
  • lettuce
  • 10 olives
  • 75gr canned tuna, drained
  • 1 anchovy, in pieces

For the dressing:

  • 1 anchovy
  • 1/2 tsp Dijon mustard
  • 1/2 tbs vinegar
  • 1 tbs olive oil
  • pepper

Serves 1 as part of the Budget Challenge

Recipe:

Cube the potatoes. Steam or boil them until just done and leave to cool.

Combine the ingredients for the dressing; grind the anchovy into a paste and stir in the remaining ingredients. Do not be tempted to add salt, the anchovy is already overly salty.

Layer the salad and drizzle the dressing over the top.
