A recipe for simple onion soup. I usually add wine, but for the Budget Challenge I used less ingredients to make a tasty soup. It contains quite some garlic, but in my eyes there is no such thing as too much garlic.
- 1 tbs butter
- 2 small onions
- 2 garlic cloves
- 250ml water
- 1/2 stock cube
- pinch of thyme
Serves 1 as part of the Budget Challenge
Melt the butter.
Slice the onions and add them to the melted butter. Bake the onions on a low flame until soft and starting to caramelise, then add the chopped garlic. This takes approximately 5-7 minutes. When the onions have caramelised well (after about 8-10 minutes), add the remaining ingredients. Leave to simmer for 20 minutes.
Serve with some fresh bread or a potato with cheese from under the grill.
