Pasta Salad with Sundried Tomatoes and Mozzarella (BC)

A very simple pasta salad, great for a summer day or for lunch. Add some extra cherry tomatoes for extra luxury.

Ingredients:

  • 75gr macaroni
  • 65gr mozzarella
  • 4 sundried tomatoes in oil
  • 1 small red onion
  • 50gr peas, thawed from frozen
  • salt/pepper
  • 1 tsp dried basil

Serves 1 as part of the Budget Challenge

Recipe:

Cook the macaroni according to packet instructions. Drain and rinse under cold water.

Cut the mozzarella into small cubes. Slice the sundried tomatoes thinly (do not drain them too much, the oil makes a great dressing). Slice the red onion into thin half-moons.

Combine the macaroni, mozzarella, tomatoes, onion, peas and basil and season to taste with salt and pepper.
