Combining salmon and pasta with a creamy sauce is always an instant hit. For the vegetable addition, sweet sugar snaps are added.
- 140gr salmon
- 1 onion
- 125gr fresh pasta
- 150gr sugar snaps
- 125ml cooking cream
Serves 1 as part of the Budget Challenge
Bake the salmon 3-4 minutes per side, depending on the thickness. Aim for a bit underdone, as the salmon will rest and then get added to the pasta later.
Meanwhile, cook the pasta.
Take the salmon out of the pan. In the fat of the salmon, sweat the onions until soft.
Add the sugar snaps and bake for 2 minutes.
Add the cream and season to taste with salt and pepper.
Toss the pasta with the creamy sauce. Then add the salmon in flakes. Heat very briefly, only about half a minute, before serving.
