Smoked salmon and spinach go really well together. They make a very simple but delicious dish when paired with pasta and a creamy sauce. You can also use raw salmon for this dish, I simply had smoked salmon left over.
- 75gr penne pasta
- 150gr spinach
- 5 tbs crème fraiche
- 100gr smoked salmon, cut into strips
Serves 1 as part of the Budget Challenge
Cook the pasta al dente and drain in a colander. Use the same pot to sweat the spinach until shrunk. Add the crème fraiche. Season to taste with salt and pepper. Add the pasta, stir well. Then add the salmon, give it a good toss and serve immediately. Don’t stir too much or the salmon will dissolve into tiny flakes.
