These cookies are deliciously wicked, combining peanutbutter and chocolate. I use wholewheat flour and less sugar, so they are less unhealthy than one might expect.
Serve with some milk or hot chocolate (or another beverage of course) as the peanutbutter may give a dry mouth feeling in the beginning.
- 115gr butter, softened
- 100gr sugar
- 1 egg
- 1 tsp vanilla extract
- 200gr peanutbutter
- 1/2 tsp baking soda
- 115gr wholewheat flour
- pinch of salt
- 150gr milk chocolate chips
Makes 20 cookies
Cream together the butter and sugar until light and fluffy.
Add the egg and the vanilla extract and beat to combine well, before mixing in the peanutbutter.
Combine the baking soda, flour and salt. Mix this into the peanutbutter mixture and combine well. Then stir in the chocolate chips.
Leave to rest in the refrigerator for 30 minutes.
Line a baking tray with baking paper.
Use an ice-cream scoop to scoop balls of dough from the bowl onto the baking paper. Flatten the balls a bit with your fingers.
Bake for 13-15 minutes on 180°C, or until starting to brown but still being somewhat soft in the center. You want chewy cookies. Leave to cool for 5 minutes on the baking tray, then move to a wire rack to cool fully.
