Buttery leek and fish. Amazing combination!
- 1 leek
- 1 tbs butter
- 1 large potato
- 125gr plaice fillet, skin off
Serves 1 as part of the Budget Challenge
Melt the butter in a large frying pan.
Wash the leek and cut it in half lengthwise. Cut each half in 5cm lengths.
Place the leek in the pan. Stir to coat the leek with the butter.
Cover the pan with a lid and simmer for 13 minutes to soften the leek.
Cook or steam the potato.
Move the leek to the side of the pan.
Keep the heat gentle while placing the plaice in the pan. On a low heat, softly bake the plaice for 3-4 minutes until cooked through. There will be no need to flip the fish over.
Serve the fish with the leek and the boiled potato.
