Pork Skewers with Peanuts and Caramelised Onions (BC)

Pork and peanuts; match made in heaven. Just ask any Satay lover. This is the rustic, simple approach to the great combo.

Ingredients:

  • 135gr pork leg steak
  • 2 tsp fish sauce
  • 1 tsp oyster sauce
  • 1 tsp honey
  • 1 tsp sunflower oil
  • cracked pepper
  • 80gr rice
  • 1 onion
  • 1 tsp sunflower oil
  • 25gr peanuts

Serves 1 as part of the Budget Challenge

Recipe:

Cut the pork into large cubes.
Combine the fish sauce, oyster sauce, honey, 1 teaspoon of oil and some cracked pepper. Marinade the pork in this for 10 minutes.

Combine the rice with 120ml of water in a small saucepan. Cook without stirring until tunnels form in the rice. Cover with a lid, turn off the heat and leave to stand for 12 minutes. Fluff with a fork before serving.

Make skewers from the pork cubes. Do not throw out the remaining marinade.

Heat the second teaspoon of oil in a large frying pan. Place the pork skewers in the pan and bake for 2-3 minutes per side until cooked through and nicely browned. Alternatively, use a panini press.
Peel the onion, halve it and cut into slices. Bake the onions brown next to the skewers. Once browned, add any leftover marinade and bake this into the onions, softening the onions at the same time.

Serve with the rice.
