Grilling a portobello mushroom gives it a great umami flavour. The addition of goat cheese makes this a great vegetarian dish, which is filling and flavourful, especially when served with a vegetable mash.
- 2 portobello mushrooms
- 1 tsp sunflower oil
- 35gr goat cheese disc
Serves 1 as part of the Budget Challenge
Heat the sunflower oil in a frying pan.
Place the mushrooms in the pan, gills down and cap up. Bake brown and softened in 2.5 minutes, then flip it over.
Place the goat cheese on top of the mushroom and bake for 2.5 minutes.
Serve with potatoes and steamed vegetables, or a vegetable mash.
