Portobellos with goat cheese and pecans (BC)

Mushrooms have a wonderful Umami flavours, which meat also has abundantly. This makes mushrooms the perfect addition to vegetarian meals, even though they lack protein. Extra protein has been added with goat cheese and pecans. Serve with a Dutch stamppot (mash) with broccoli.

Ingredients:

  • 2 portobello mushrooms
  • 50 gr pecans
  • 2 tsp sunflower oil
  • 60 gr goat cheese

Serves 1 as part of the Budget Challenge

Recipe:

Heat the oven to 190°C.

Place the portobellos in a greased oven dish. Fill the mushrooms with pecans, sprinkle the oil over the mushrooms and top with goat cheese. Bake for 15 minutes.
