Potato, Bacon, Eggs… what more do I need to say? You can eat this warm and cold. I used 2 eggs but 1 is actually also enough.
This is part of the 1 person Budget Challenge.
- 2 eggs
- 200gr floury potatoes
- 75gr bacon/pancetta cubes
- 1 little gem lettuce
- 1 tbs fresh chives, or 1 tsp dried chives
Serves 1 as part of the Budget Challenge
Place the eggs in cold water, bring them to the boil and cook for 6 minutes. Shock under cold water.
Peel the potatoes. Cut them into small pieces and cook until done. Drain.
Bake the bacon until semi crisp. Toss with the potatoes. Add the chives (when serving cold, at fresh chives when everything has cooled off, to keep them crisp).
Lay the lettuce leaves in a deep plate. Top with the potatoes and bacon. Cut the eggs into 6-8 wedges each and place this on top of the salad. Enjoy!
