A great way to make a simple meal, Quesedillas can be adjusted per your liking. I have provided a recipe for two Quesedillas which fit within the Budget Challenge. But feel free to adjust as you like, use leftovers you have or whatever cheese you like. I like Swiss Brown mushrooms because they have great flavour but don’t cost much more than the standard Whitecap mushrooms. For Quesedillas they work because they contain less water too, although I can advise you to keep them above a plate, especially vegetables can contain quite some water, and if you tilt the Quesedilla sideways when eating, this excess liquid will just drip onto your plate.
- 2 tortilla wraps
- 1 tbs mayonnaise
- 1/2 tbs sweet and sour chili sauce
- 6 slices of bacon
- 50gr Swiss Brown mushrooms
- 3 tbs grated cheese
- 2 tbs feta cheese
Serves 1 as part of the Budget Challenge
Spread half of the mayonnaise over each tortilla. Spread the chili sauce over one of them.
Top both with lettuce and with three slices of bacon.
Now top the one which has the chili sauce with the grated cheese.
Top the other one with the mushrooms and feta cheese.
Grill in a Panini press for 5 minutes (or bake in a frying pan with a plate on top to weigh them down)
