Rustic Fries

Belgium is known for their thick fries, and you can quite easily make these yourself. You simply steam the fries, then fry them. Belgians serve mayonnaise with fries (which is a match made in heaven) but I adore these with crème fraiche and chili sauce too.

Ingredients:

  • Large floury potatoes
  • Salt
  • Crème fraiche (to serve, optional)
  • Sweet and sour chili sauce

Recipe:

Wash the potatoes. There is no need to peel them, simply cut them into thick fries.
Steam them (I place mine in a steaming container in the microwave, then rinse off the starch afterwards) or cook them until done.

Heat a pan of oil or a frying pan to 180°C. Bake the fries for 5 minutes or until brown and crisp. Serve with whatever you prefer.
