Call it cheating or call it being smart. This is kind of just “leftovers soup”. You take whatever is left in your fridge on the day before you do your groceries, add it to a pot and make soup. Add some pasta to make it a meal, or serve with bread. This recipe adds macaroni, which takes little time to cook but fills you up wonderfully.

- 1/2 yellow bell pepper
- 1/2 green bell pepper
- 1 small carrot
- 250ml water
- 1/2 stock cube
- 1 tsp soy sauce
- 25gr macaroni
Serves 1 as part of the Budget Challenge
Cut the vegetables in small cubes of equal size, I go for 5-7mm.
Add everything except the macaroni to a pot. Bring to a rolling boil. Add the macaroni and leave to simmer for 5-6 minutes or until the macaroni is cooked.
