Salmon and Broccoli Pasta (BC)

Salmon, broccoli and dill go really well together in this simple but delicious creamy pasta dish.

Ingredients:

  • 80gr penne pasta
  • 250gr broccoli
  • 3 tbs water
  • 4 tbs crème fraîche
  • 125gr salmon
  • 1 tbs fresh dill

Serves 1 as part of the Budget Challenge

Recipe:

Cook the pasta al dente.

Cut the broccoli into florets. Cut the stalk into pieces as well, this is really delicious and a waste to throw away. Heat a dry frying pan. Add the broccoli, bake for 30 seconds and then add the water. Simmer for 6 minutes to have the broccoli cook (and bake once the water is all gone).

Add the crème fraîche. Simmer gently for a minute.
Cut the salmon into chunks and add them to the sauce. Simmer for 2 minutes.
Add the dill at the end together with the pasta. Toss to combine and serve immediately.
