Salmon with Creamy Mushroom Sauce (BC)

Salmon goes very well with this paprika flavoured mushroom sauce. It is rich and creamy and perfect for rainy days.

Ingredients:

  • 1 tsp Sunflower oil
  • 200gr salmon steak
  • 1 tsp Sunflower oil
  • 1 small red onion
  • 175gr Swiss Brown mushrooms
  • 180ml cooking cream
  • 1/2 tsp paprika powder
  • salt/pepper

Serves 1 as part of the Budget Challenge

Recipe:

Cook rice to serve with the salmon.

Heat the first teaspoon of sunflower oil in a small frying pan.
Bake the salmon for 5 minutes per side – depending on the thickness of the steak – or until almost cooked. You want the center to be pink and rare.

Chop the onion finely. Slice the mushrooms.
Heat the second teaspoon of oil in a thick based frying pan. Add the onion and mushrooms and bake brown.
Add the paprika powder, stir well, then add the cream. On a high flame, simmer until reduced and thickened.
Season to taste with salt and pepper.

Serve the salmon with rice and the sauce.
