Savoury Cashew Spread

I tweaked a recipe which stated “vegan cream cheese” but I refuse to call anything “vegan [insert non vegan item]” so Savoury Cashew Spread it is! It’s nothing like cream cheese, but it’s hella delicious.
You can find nutritional yeast flakes in health stores like Holland & Barrett.

Ingredients:

  • 100gr cashews
  • 100gr cashew milk
  • 3 tbs nutritional yeast
  • 1.5 tbs lemon juice
  • pinch of salt
  • pinch of pepper
  • 1/2 tsp onion powder

Makes about a cup

Recipe:

Pour boiling water over the cashews. Let them soak for 30 minutes, then drain.
Blend the cashews and the cashew milk briefly, until a grainy micture forms.
Add the nutritional yeast, lemon juice, salt, pepper and onion powder. Blend further until smooth.

Can be stored for up to 2 weeks in the fridge.
