When cutting cucumber into slices, the surface is very slippery. By smacking cucumber, a rougher surface is created, which allows for better mixing of the salad flavours. Plus, it is much more fun to beat the life out of a cucumber with a wooden spoon…
- 1/2 cucumber
- pinch of salt
- 1 clove of garlic, pressed
- 1 small shallot, chopped finely
- 1/4th tsp sugar
- 1 tsp soy sauce
- 1/2 tsp vinegar (preferably brown Chinese vinegar)
- 1 tsp sunflower oil
- 1/4th tsp ground chili pepper
- ground pepper
- 1 spring onion, in rings
- 4 mint leaves, chopped coarsely

Smack the cucumber into rough chunks. Cut or break any larger chunks into bitesize pieces. Sprinkle a little salt over it and leave to stand for 10 minutes.
After 10 minutes; wash briefly and pat the chunks dry.
Combine the garlic, shallot, sugar, soy sauce, vinegar, oil, chili powder and pepper and toss with the cucumber.
Spread the spring onion and mint over the top of the salad.
