Salmon and boiled egg are a great match, and they make a great sandwich too. I poached the egg, but you can alternatively also boil or bake it, or scramble them with some cream and fresh chives.
- 1 mini ciabatta
- 1 tbs cream cheese
- 1 tsp fresh chives, chopped
- 1 slice salmon (40gr)
- 1 large egg
- 1 tsp capers
Serves 1 as part of the Budget Challenge
Combine the cream cheese, chives and some salt and pepper to taste.
Cut the ciabatta open and spread the cream cheese on the bottom half. Top with the salmon.
Bring a deep pot of water to the boil. Crack the egg gently in a shallow boil. When the water boils create a vortex with a spoon or knife, then slip the egg into the middle of the vortex.
Cook the egg for 2 minutes for soft or 4 for a firm egg yolk that isn’t dry.
Take the egg out of the water with a slotted spoon and place it on the salmon. Top with the capers, then with the top half of the ciabatta bun.
