Spaghetti with a creamy, garlicky sauce with spinach… need I say more?
- 1 onion
- <1 tsp sunflower oil/li>
- 3 cloves of garlic
- 175gr spinach
- 100ml cream (7% fat)
- 70gr spaghetti
Serves 1 as part of the Budget Challenge
Set up water and boil the spaghetti al dente. You can cook it early, you will toss it with the sauce before serving anyways.
Chop the onion. Bake it softly in the oil until it starts to turn translucent, approximately 3 minutes. Meanwhile, chop the garlic finely. Add the garlic and bake for another minute until nice and fragrant.
Add the spinach and bakefor about 3 minutes, or until the spinach has fully wilted. Add the cream, simmer for a minute. Season to taste with salt and pepper.
Now toss the spaghetti with the sauce and serve hot.
