This is kind of like a fritatta, as the spinach is baked into the omelet. Spinach and eggs are a great combination and go very well together on a roll of bread.
- 1 tsp sunflower oil
- 1/2 onion
- 75gr fresh spinach
- 2 eggs
- 1 tbs milk
- 1 tbs cream
- 2 breadrolls
- 2 leaves of lettuce
Serves 2 (or 1 very hungry person as part of the Budget Challenge)
Slice the onion into rings. Bake them soft in the oil for about 2 minutes. Add the spinach and softly bake to soften.
Stir together the eggs, milk and cream. Season to taste with salt and pepper.
Pour the eggs over the spinach. Bake until the egg has just set, if necessary flipping it over midway through.
Cut the rolls open, place some lettuce on the base of each roll. Divide the spinach omelet over the buns.
